Yummy home made soup!

I made two pots of soup tonight. Well, one is done, the other is simmering away in the crock pot.

The first was a pot of homemade tomato soup. It was modified from a recipe on Gaper’s Block. You have to scroll through the article a little, but you’ll find it.

What I did was roast the tomatoes in olive oil with garlic and soranto peppers for spice. Then I had the leeks, onion, dry herbs, and chicken stock heating on the stove. All together it is an amazing, kind of spicey, soup. Yum, yum. I can’t stop eating it, it is so good. Yum.

Only catch was that I don’t have a blender or food processor, so I tried to blend it using a hand mixer. Not a great plan. There is some yummy soup on the wall now. Oops. And lots in my tummy.

The potato leek soup is simmering away. Potatos, garlic, leeks, onion, scallions, chicken stock, olive oil, lemon, salt and pepper. Yum. I’m pretty excited about it too. Although I’m pretty sure that my liberal use of garlic, onions, AND scallions will vampires and dates away for a pretty long time.
